2、把鸡肉平摊在菜板上,用刀背拍松,然后刻上十字花刀,切成约1.5厘米的方丁。

3、把切好的鸡丁放入碗里,加入精盐、料酒、蛋清、生粉,搅拌均匀。

4、花生米用热水烧泡,去掉红皮,放在温油内炸熟。

5、鸡丁放入6成热的油中,炸至鸡丁发白时,倒入漏勺。

6、在热锅里放少许油,放入辣椒节连炒。当辣椒变成紫红色时,放入葱姜。

7、然后在放入鸡丁,加入酱油、醋、糖、精盐、味精,放入高汤,用旺火烧开。

8、在淋入水淀粉,勾芡。在加入花生米,淋入油,搅拌均匀。
